Salted caramel recipe with a secret ingredient

This salted caramel recipe has no salt as an ingredient.  Instead it uses salted caramel recipe slightly salty-miso!  I got the idea for a salted caramel recipe with miso after miso ice cream making and several people have commented that it tasted like salted caramel.  I developed the salted caramel recipe on my own (I don't think it's been done before), and could not be more satisfied with the results.

I licked the spoon, I licked the spatula, I almost my tongue stuck in the pot, and my only regret after these salted caramel put my ginger pear cupcakes that there was a larger proportion of caramel to cupcake was.  The miso salted caramel is more than just salted caramel-it is salted caramel with depth (miso brings a taste of his own beyond just salt) and an Asian flair.  If I could history again, would this be salted caramel recipe used to sweeten tea during tea ceremonies in ancient tea houses on lush Japanese mountains.

This heavily salted caramel recipe is adapted from the sea salt caramel in the sea salt caramel brownies found on them is getting doughmesstic and originally found in a sweet and salty cake in baked: new frontiers in the bin.
1 tablespoon red miso paste2 El water1 c sugar2 El light corn syrup1 teaspoon vanilla1/4 C sour creamIn a small cup, los the miso in the water.In a medium saucepan over high heat, combine the sugar and glucose syrup. Cook for 6-8 minutes, or until the sugar turns a medium goldish brown, stirring constantly. Remove from heat.  (I tend to burn sugar.  Susan from "she is getting doughmesstic" remembered in the instructions that even after removing the sugar of the heat, it will continue to cook.  It is best to early than too late.  I've been listening, and this caramel not burn.  Yippee!) Cool for one minute.Add the miso and vanilla and stir quickly to combine.Whisk in the sour cream.Cool to room temperature.However, you want to use-sprinkled on fruit, on the fingers, on ice, or on cupcakes!

Hello, Cupcake taste! from taste of Home!

Halloween is coming and taste of Home Magazine
invited us out to their test kitchen to stir up some monstrous ideas for the holidays. We had so much fun playing with marshmallows or jelly, that we decided to do everything from them, we created a whole spread of Marshmallow monsters use marshmallows or jelly and ingredients right out of the pantry to do brilliantly scary creatures. Just take a look at the big Eyed Marshmallow Monster we created. It has one big Marshmallow with a Junior Mint in mind, and plenty of canned frosting tinted neon green (we use Duncan Hines Creamy Homestyle) with neon food coloring (McCormick). We took the squeeze-release-pull technique from what's new, Cupcake? create furry fandom frosting uses the texture in a freezer Ziploc bag weight piping. I love not comfortable fog, the photographer is used for photos. Black solid cupcake liners are available in select grocery stores (Reynolds).

When one eye is not enough ... Use mini marshmallows or jelly and do parties! We have used many mini marshmallows or jelly with orange M & Ms Minis to make our Google Eyed Monster. For this one we placed mini Marshmallow eyes at the end of licorice lace and lace make crazy twisted eyes. We used the blue sprinkles neon green frosting increase creep factor.

Kelly has, as far as I know, a completely unique blog idea.  She takes quotes from food bloggers and cartoonizing them.  Check out some of the other cartoons they made on the basis of quotations of the Pioneer Woman and Dorrie Greenspan (my quote is in some pretty good company!).


When Kelly is famous and has a big book deal (I suspect they will), I can say that her first blog cartoon was inspired by me and then I like the cartoon version of myself blush will.

Holiday Cupcake ideas, Starlight as Cupcakes!

Christmas Solidify Cupcakes-A Christmas Classic Transformed


This stol cupcakes Christmas stole my heart.  I have the pun Stol out of the way in the first line. Now you can (specially my father, the pun master) continue reading the therapies cupcake post without waiting to see if/when would I use the bad pun.

Each year, that I like to share a new Christmas cupcake recipe (' Tis the season for baking)!  I have gingerbread cupcakes, lawyer latte cupcakes, hot wine cupcakes with roasted chestnuts frosting and panettone cupcakes.  As I was debating what to make of this year, I received a free copy of the inspirational book a world of Cake by Krystina Castella. (Skip read all the way to the end of the post if you want to know how you can win a signed copy).

used with permission of storey PublishingA world of the cake is not a recipe book (although it is jam packed with recipes); It is a history book.  The traces cakes all over the world of the first cakes in 5000 BCE to the baked until today.  A casual baker with even the slightest interest in history would be a world of Cake an engaging read.  Why not us the history of cake instead of the boring details of wars studying when I was in Junior High?  We could have skipped the history of the British Royal family and instead revisiting the cake pedigrees where similar cakes (like all fried pies, for example) are plotted family tree-style to show how they are related.


Since I was looking for a recipe for Christmas, I was obviously interested to see what Krystina had to say about the history of Christmas cake and what Christmas cake recipes they included.  You have to read the book for the full list.  However, since I ended up choosing therapies, I'll tell you what they had to say about it:

Christmas Stol cupcakes These recipe Christmas Stol cupcakes breakfasty are and would be best served on Christmas morning-they are loaded with fruit (so they are kind of healthy, right?) but they are definitely not the dreaded medium fruitcake.  This is a recipe that can easily be changed.  See my list of mix-ins, but feel free to play around and add your own!

Yield: 24 cupcakes
2 C dried fruit (I used 1/2 C of each of the following: raisins, dried cherries, currants, dried and dried cranberries) 3 tablespoons cherry liqueur4 El brandy2 1/4 teaspoon active dry warm yeast1/2 C water1 c milk3/4 C + 2 tablespoons sugar 1/2 teaspoon salt1 teaspoon almond extract1 teaspoon vanilla extract5 C all-purpose flour1 c slivered almondszest of 1 lemon 1/2 C candied orange peels, loosely chopped2 eggs1 c unsalted butter, room temperature1 teaspoon ground cinnamon1 teaspoon ground nutmeg1/2 teaspoon cardamomMix the dried fruit, cherry liqueur and 3 tablespoons of brandy in a small bowl and set aside. Dissolve the yeast in the water in a large bowl.  Let the mixture rest for five minutes. Heat the milk, 3/4 cup sugar and salt in a small saucepan, stirring until the sugar is dissolved.Remove the milk mixture from the heat and add the remaining 1 tablespoon of brandy, vanilla extract and almond extract.  Allow to cool.Add the milk mixture to the yeast.Gradually mix in 1 cup of the flour, beating until smooth. The dough will not look like the typical bread dough.  It is soupy.  Don't panic as I did!  You didn't do anything wrong.  It will work just fine!Cover and let the dough rise in a warm place for at least two hours-until it has doubled in size.  (If you want to keep baking, you could get the two-hour using snickerdoodles or go play in the snow, Christmas cards and cheery.)When the dough has risen, punch down and mixing in the dried fruit, almonds, candied orange peel and Peel.Add the eggs, 3/4 cup of butter, 1/2 teaspoon, of the cinnamon and nutmeg.Stir in 3 more cups of flour and mix the dough until smooth.Place the dough onto a lightly floured work surface.Knead in the remaining 1 cup of flour until smooth.Batter between 24 cupcake liners evenly.Melt the remaining 1/4 cup of butter and the brush on the uncooked cupcakes.Combine the remaining 2 tablespoons of sugar, 1/2 teaspoon cinnamon and cardamom in a bowl.Sprinkle the tops of the cupcakes with the mixture.Deck the cupcake load and let rise for 1 1/2 hours until doubled in size. (While you're waiting, why not make some gingersnaps?)Bake at 350 F for 20 minutes or until tops are golden.Lemon Glaze Recipe 3/4 C powdered sugar2 tablespoons warm regard teaspoon lemon juiceMix all ingredients and drizzle about Stol cupcakes.A world of Cake Giveaway Details

To my surprise when I went to the list of my Pashmina on ebay I extracts which are full of parts of Pashmina sells at 5 to 10 dollars per piece.


I was quite disappointed. Parts is a rare gift to nature to us and Pashmina with parts so how can I sell so cheap Pashmina-where isin ' t have enough parts to here, so if you want cheap Pashmina.

Indian Corn Cupcakes for Indian summer

Hello Cupcakers!

We know, it is only the beginning of September, but when kids head back to school we start thinking falls. It is still pretty hot, so you might call this an Indian summer. And what better way to celebrate the Indian summer than by making Indian Corn Cupcakes. We took the idea of maize COB cupcakes in Hello, Cupcake! and in our latest book, what's new, Cupcake? We exchanged yellow and White jelly beans to russets, oranges, creme and gold site. Jelly Belly has a wide range of colors and all variants of taste great together. We start by mixture of corn design all our jellybean colors together in a bowl. And we use them in whatever order then they come out of the bowl. This makes the pattern more random. We decided to try a variation on the maize kakaohinder also. In the book we used the WNC phyllo dough. But here we tr?de ' why not use corn kakaohinder? ' We got these right from the grocery store freezer section (the way they were meant for wrapping tamales). We opened the package, spread kakaohinder on paper towels and let them air dry. Then we cut into long thin shapes and curled them a little to place around the cupcakes as a garnish. This makes a wonderful dessert midpoint for any foliage collection. Nougat with chocolate Malt-such as in the milky way Bars


To making homemade nougat, Nougat was a mystery to me.  Nougat was the alien tough substance found in my least favorite candy bars.  A request to Galaxy cupcakes (more on that in a future post) prompted me to research nougat and eventually to some myself.


I learned that while nougat traditionally a candy made with nuts (per Wikipedia: "the word nougat comes from Occitan pan nogat (Occitan pronunciation: [panu television of the ?at]), which means nutbread."), the nougat in Galaxy contains no nuts-it is a chocolate malt nougat.  The created with proteins (such as a meringue), but with the addition of sugar, glucose syrup, malted milk powder and chocolate.


Despite my dislike for milky way bars (even before I became a chocolate snob, I ultra-sweet candy bars don't like), I bought one for research purposes.  As a teenager buying condoms, I hoped that I was not spotted by someone who knew me.  Very often are foods that I don't magically delicious when I create them yourself.  This was not the case with Nougat.  My homemade nougat was a spot-on contest for Galaxy nougat-sticky and nauseating sweet.  Keep your Galaxy bars?  You will love this stuff!


This means that I don't like the Galaxy cupcakes?  Nope.  When I use the nougat mixed in malt chocolate cupcake batter, balance of the candy sweetness harmoniously the not-so-sweet batter. I was happy with the results.  Give me nougat in a cupcake on nougat on its own every day!


Nougat recipe


I have the malted milk nougat recipe from Elizabeth LaBau on About.com.  I agree below with a few minor changes and my notes reprints.
2 C granulated sugar2/3 C light corn placed/3 C water2 egg whites2 oz unsweetened chocolate1/3 C malted milk powder 1/8 teaspoon saltLine x 8 pan with parchment.Place the sugar, corn syrup and water in a medium saucepan over medium-high heat and stir until the sugar dissolves.Brush down the sides of the pan with a wet pastry brush to prevent sugar crystals forms (I skipped this step, but had no problems).Cooking without stirring up the temperature on a candy thermometer reached 260 F. While you wait for the right temperature, proceed to prepare the rest of the recipe.Cut the chocolate into small pieces and place it in a microwave safe bowl. Microwave until melted, stir after every 30 seconds to prevent overheating. Stir until completely smooth, then across something cool.Place the egg whites in a clean bowl of a large stand mixer fitted with the whisk attachment. When the syrup reaches 250 F, begin to beat the egg whites on medium speed.Once the sugar syrup 260 F reached, take the pan off the heat. Turn off the mixer for high speed and slow the flow into the sugar syrup along the side of the bowl. Continue to save on high speed for about 5 minutes, until the proteins shiny, white and stiff.The blender and add the melted chocolate, salt and malted milk powder. Mix until well combined and smooth. How to turn off the mixer and scrape down the sides of the Bowl very well. (The nougat will have the consistency of Fun-Tak mounting Putty.)Scrape the nougat into the prepared pan and smooth in an even layer. Let it cool at room temperature to fully set, then cut into small squares (or sideways to use in cupcakes). The nougat can be stored in an airtight container at room temperature for up to a week.

Red Carpet Cupcake winner!


I had the pleasure of tasting the top ten entries in Duncan Hines
Red Carpet Cupcake challenge yesterday. Together with judges from Saveur,
Dear Home Journal, better homes and gardens and the fabulous
Cupcake Cafe in Manhattan I helped to choose a really tasty recipe to
be served at the Emmys. Judging was tough, there were so many
great recipe ideas. Ingredients, ranging from salted caramel for
Homemade Peanut butter toffee and even beautiful star fruit slices
was used. But in the end judges found consensus around a cupcake
There was aptly named red carpet Glamour cupcake. It has raspberry
taste in a red velvet bent cake and a tasty smooth raspberry buttercream
and fresh fruit on top. Delicious! Congratulations to the winner
Katie Rousonelous in Wisconsin. A terrific recipe. Her red carpet
Glamour cupcake will be served on artist nominee reception
next month and Katie have a seat on the red carpet for the event.

Chocolate Rice Krispie treats Pop Rock Snap, Crackle and POP


Rice Krispies only snap, Crackle and pop in milk.  Rice Krispie treats his silent friends, unless you have a few of these:



While the photo above is reminiscent of the huge, precious gems at the American Museum of Natural History in New York, it's actually a macro photo of pastry rocks, unflavored pop rocks sold on a chef Rubber.  For those who live under a "rock" (I've learned that my mother and my neighbor fall into this category), Pop rocks are the super duper fun candy that explodes in your mouth when you eat it.


Why I pastry rocks instead of Pop Rocks?
I don't like Pop Rocks for their taste; I use them for some action. Your purchase gets you pleasure pastry rocks extended because they are in a large container a pound. (No, chef Rubber not pay me or give me something for free to say this.  Yes, I realize that pop rocks are a easier date-no mail order.  And, Yes, Pop Rocks will work perfectly in this recipe.)How to make chocolate Rice Krispie treats Pop Rock
Make your favorite Rice Krispie treat recipe (I used my honey, Nutella Rice Krispie treats).  Don't be tempted to Pop Rocks directly in the Rice Krispie treats. Once the Pop Rocks the mixture to treat hit, will they all pop (I can not explain why this doesn't happen in the chocolate.  If each pharmacy readers this can explain in the comments, do.).
Let the treats chill, but they don't cut.
Six grams of semi-sweet chocolate chips in the microwave or a double boiler to melt.  Stir 1/2 cup cake rocks or Pop rocks in the melted chocolate.Pour the pop rock chocolate over the Rice Krispie treats.Cover and chill for at least three hours.The treats cut into squares.Make sure to let the chocolate melt in your mouth while you eat them.  If you inhale the treats, the Pop Rocks will not enough saliva on them to pop-and that would be a pity.

Candied Orange Peel-Pub Peels

My candied orange peel came out all wrong.  You see, I wanted the candied orange peel smooth and shiny, if small sticks of Orange covered with glass.  I my candied orange peel served in crystal and daintily eaten one by one by colleagues in cocktail dress for eyes.  I ended up with pub peels (a term I pride am coins).  My pub peels are candied orange peels that rough around the edges and more likely to be eaten by someone like me, who would do this while making  them: my good friend Twitter, Garrick_S says that this photo
makes me like Homer Simpson.What does candied orange peel taste like? if you have never had a Candied peel before, the whole concept of eating a peeling rebellious seem.  But if those who love to suck the marrow from bones of beef will tell you, sometimes food particles that you think should be thrown should actually be thrown in your mouth!  To candied citrus peel, you must first blanche de Peel four times (don't worry, I will tell you how to do this below).  It is quite time consuming (I got mine while watching a episode of glee, so the time flew) but necessary because it removes a lot of the bitterness of the Peel. They taste not nothing like they would do if you took a bite into them.  Then you are essentially making caramel and let it stick to the Peel.  You end up with a chewy, crunchy citrus caramel candy that is still a slight bitterness to cut the sweet.

Candied orange peel (and Grapefruit Peel) recipe

I have the original recipe of candied orange peel of VeganBaking.net.   Like I said above, I ended up messing up the recipe in a way that made me happy to have made the error.  Instead of the traditional smooth Candied peel which VeganBaking recipe makes, in the end I crusty caramel coated Peel.  Here is my adaptation of the recipe.
5 navel oranges1 grapefruit (you can all oranges or all grapefruit if you prefer.  You can also try this with other tangerines or grapefruit.)6 C-sugar
The fruit cut in half the and juice. (You don't have the JUICE so save to drink!)Scrape out the pulp, but let the white pith.  It should look like the fruit in the crazy picture of me, above.  The ends of the oranges cut to remove the raw components of the Peel. Cut the Peel into slices out there look like French fries.Place the orange peel slices in a large sauce pan and fill it with water so the peels fall.The Peel bring to a boil over high heat, then use a colander to drain off the water. Boil and drain of three times. Place the sugar, two cups of water and orange peels back in the sauce pan over medium heat.Apply the mixture to 250 F, stirring occasionally (if you are not a candy thermometer, just watch for the sugar to thick and caramel-like)-about thirty minutes. Keep the peels on the stove until the only in the pot fat caramel and peel-no liquidy syrup.  Prepare a baking sheet lined with parchment paper or a Silpat. Get the peel of the fire with the help of Tang and place them on the prepared baking sheet or Silpat.  Allow to cool and serve as a snack or the peels for use in therapies (available soon) or panettone cut out.

Golden Globe Cupcakes

the Golden Globe awards are almost here, and while some people may be wondering would that or Black Swan will win best film, the more important question is, "what cupcakes Golden Globe will you serve at your party Golden Globe view?"

The obvious choice for the Golden Globe cupcakes is golden glow cupcakes.  The names are so similar that golden glow cupcakes almost looks like they are for the Golden Globes were made.  However, never to go with a clear choice, I focused on America's favorite movie snack (popcorn!) and St. Louis favorite cake (gooey butter cake) and Golden Globe gooey buttered popcorn cupcakes made!


Gooey buttered popcorn cupcakes are not diet food.  They have a buttery crust topped with a buttery, salty, popcorny gooey topping, and they are ready with sticky, sweet caramel corn.  Eat them on your Golden Globe party or each and every time you host a movie night.



The secret ingredient In Golden Globe Cupcakes


These gooey buttered popcorn cupcakes contain an ingredient that you probably don't even own and probably haven't heard of:

Popcorn flower is just what you might think-popped popcorn that has been ground into flour.  You can buy online popcorn flour from Amish country or you can create your own, you have a air popper (popcorn popped with oils do not have the same consistency in the processing into flour) and a blender or food processor that is suitable for the processing of food fine enough to be considered as a flower (such as the Vitamix).

Golden Globe Cupcake recipe


To my Golden Globe cupcakes, changed I smitten kitchen gooey Butter Cake Recipe (who adapted from Melissa Clark on the New York Times, which the custom version of Molly Killeen on the Park Slope Farmers ' Market) turn into cupcakes and I included the popcorn flower.


The cupcakes consists of two parts: a butter crust and a gooey topping (both are fried).  I found that most of my tasters wanted a higher goo crust ratio.  To answer for that, as I recreated this recipe, I would try to get the cake part but still distribute under the same number of cupcake liners by half.  You can experiment with your own perfect ratio.  But keep in mind that if you the linings too high with goo fills up, they will in the oven's back.


Another thing to be aware of is that because these cupcakes so buttery, they tend to attract the linings.  I know (because I have many emails and comments on the topic) that this drives some of you mad.  My only suggestion is to use a decorative wrapper outside of the liner.  Jonathan made my movie theatre popcorn wrapper on my Silhouette.  However, you can easily create these wrappers by hand (see my tutorial on how to make cupcake wrappers).  It would be a fun project for kids!


Yield: 18 cupcakes


For the crust:
3 tablespoons of milk, cream temperature2 tablespoons hot water 1 3/4 teaspoon active dry yeast6 tablespoons unsalted butter, room temperature3 El sugar1/2 teaspoon kosher salt1 large egg1 3/4 C all-purpose flourFor the topping:
3 tablespoons plus 1 teaspoon light corn put tablespoons water 2 1/2 teaspoon vanilla extract3/4 C unsalted butter, room temperature1 1/2 C sugar1 teaspoon kosher salt, divided 1 large egg1 c popcorn flower (you can use all-purpose flour if you can not buy or making popcorn flour)
Crust instructions: In a small bowl, mix milk with water. Add yeast and whisk gently until it dissolves. In a medium bowl, mix salt, butter and sugar until light and fluffy. Beat the egg in the butter/sugar mixture. Alternately mix in the flour and the milk mixture, scraping down sides of Bowl between each addition.Mix until the mixture forms a smooth ball (if you use a stand mixer, a dough hook and beat dough at medium speed for 7 to 10 minutes.)Line cupcake tins with 18 linings.Divides evenly (or as close as you can get) crust between the liners-pressing with your fingertips in the bottom of the linings.Coverage of cans with plastic wrap or a towel, put in a warm place, and let rise until doubled, 2 1/2 to 3 hours.Gooey topping instructions:
In a small bowl, whisk corn syrup with water and vanilla.Mix in a medium bowl, butter, sugar and 1/2 teaspoon salt until light and fluffy. Beat the egg in the butter/sugar mixture. Alternately Add popcorn flour and corn syrup mixture, scraping down sides of Bowl between each addition.Spoon topping evenly over risen crusts.Sprinkle the top of each cupcake with salt. Bake at 350 F exactly 20 minutes.  Note that the default toothpick method cannot be used to tell if they are done because they are considered to be gooey.  I found that if I the cupcakes more than 20 minutes baked, they flooded.  Allow to cool in the pan. Caramel Corn Cupcake Topper

Top each cupcake with caramel corn just before serving (if you put them too early on, the cupcakes will get soggy).  You can buy caramel corn or create your own.  I made my popcorn on the stove top-this HubPages illustrated popcorn tutorial made it easy to make.  Then, I melted a cup of sugar in a heavy bottomed pot on the stove and the resulting caramel about four cups of popcorn cast.  If you get even fancier than I want to, you can make your caramel corn in cute popcorn balls (check out this caramel popcorn balls of Sweet Paul for inspiration).

Lamb Burger recipe with chocolate and homemade Ketchup


This lamb Burger recipe with a touch of chocolate and homemade ketchup is the first of Jonathan (my husband and personal chef) recipes that I've ever posted.  While Jonathan is best known on this site for taking the beautiful food photos in each of my posts, he is just as (if not more) comfortable in the kitchen as I am.  I bake.  He boils.



The main reason I haven't one of Jonathan the recipes placed is that Jonathan recipes cannot be used.  He is the type of chef who never the same thing twice is because he doesn't remember what he did.  He throws just things on the stove and like magic, he conjures up a gourmet meal.  I am a lucky gal!

That was because Jonathan created
the meat sauce with no written recipe.
Last year, when I was preparing my entry for the Scharffen Berger Chocolate adventure Contest, I encouraged Jonathan to create an entry also. For the chance of ten thousand dollars I thought he could write down recipe.  As it turned out, I have written the recipe down-after him around the kitchen and copious notes while he cooked.


The Lamb Burger recipe didn't win (my black Thai cupcakes or not), but the good news for you and me is that the Lamb Burger recipe is now registered for us to enjoy and time!


Scharffen Lambergers recipe
1 oz bittersweet chocolate
1 pound ground lamb1 El mint leaves, finely chopped1/2 teaspoon smoked salt1/4 teaspoon white pepper1 teaspoon smoked paprika1 teaspoon sumac1/4 teaspoon dried cayenne pepper, ground1/2 teaspoon garlic powder1/2 teaspoon cumin seed1 El canola oil4 whole grain hamburger buns1 c arugulaChop chocolate into small pieces and melt completely in a double boiler or microwave.In a large bowl, combine chocolate, lamb, mint and spices. Mix thoroughly.Divide the Lamb seasoned ground in four balls.Heat canola oil in a non-stick frying pan over medium-high heat.Add patties the oil and cook thoroughly, about 5 minutes per side.Light toast hamburger buns.Place each patty on the bottom half of a roll. Spread homemade ketchup (see below) on the top of the patty, to taste. Garnish with Arugula and cover with the top of the roll.
Homemade Ketchup

If you have never tried homemade ketchup before, you are in for a treat!  You don't have to make lamb burgers to try this ketchup.  Use it on any time/any time instead of the stuff in the bottle.
1 oz bittersweet chocolate15 oz (1 can) tomato sauce3 tablespoon apple cider vinegar1/2 teaspoon garlic powder1/2 teaspoon ONION powder1/4 teaspoon smoked salt1/2 teaspoon sumacCombine all ingredients in a nonreactive medium saucepan.Over medium-high heat until the mixture to a slow boil, stirring regularly.Lower heat and simmer until reduced by half.Remove from heat and cool to room temperature.Keep in the refrigerator until ready to use. Ginger Pear Cupcakes with Miso salted caramel

The Candied Ginger on top of these cupcakes was a last minute addition.  However, rounded it out the taste of this ginger pear cupcakes with miso caramel glaze so well that I as a required ingredient-not an optional topping bid.  My food stylist/photographer husband put the Candied Ginger in a small nest for aesthetics, but I would recommend spreading, so you have a small piece of it in every bite of the best dining experience.  In this way will you Fill every bite with buttery yellow cake, fragrant and juicy PEAR, oozey sweet and salty caramel and sharp and spicy ginger-cupcake nirvana.


Ginger Pear Cupcake recipe

To the ginger pear cupcakes, ginger and add chopped pears to your favorite yellow cake recipe.  I started with a pound cake cupcake recipe that really close cupcakes produces.  If you are lighter/fluffier yellow cake, try instead my sour cream cupcake recipe.

Yield: 12 cupcakes

3/4 C unsalted butter1 1/2 C sugar3 eggs 1 1/2 C cake flour 1/2 C whole milk 1/2 teaspoon vanilla extract 1/2 teaspoon ground Ginger (if you're a stronger ginger taste, you can duplicate.)1 ripe but not overripe PEAR, chopped into cubes of 1/4 inch
Cream butter and sugar together.Beat in the eggs, one at a time.Whisk in flour, one cup at a time, alternating with milk.Add vanilla and ginger.Save on medium to high speed for 2 minutes, scraping down sides of the bowl.Expand in pears. Evenly between 12 cupcake liners (liners will be filled almost all the way to the top).Bake at 350 F for 25 minutes or until cupcakes bounce back when lightly touched.Miso salted caramel

See my post on salted caramel with miso for the salted caramel recipe.  Spread the caramel on the cupcakes just before serving.  If the caramel is too early on, it will dissolve in the cupcake.  The cupcakes won't look so beautiful and will they too heavy.

We have been in love with our cupcake cocktails ever since we designed them. for our what's newsletter (if you don't know about what the newsletter, you must move the character to the next question www.hellocupcakebook.com where you will also find directions in order to make these little champagnetype).


When people on food network wine and Food Festival and Jelly bellies (streaky) came to us and asked if we would be interested in participating in this event at this year's Festival SWEETS tr?de we Cupcake Cocktails would be perfect. Then we found out we need to earn 1000 of the event, when we invented Mini Cupcake Cocktail.


This little drink is now not a full cupcake like our Cupcake Cocktail full size. You need actually even use cupcake. It could also happen with frozen pound cake (Sara Lee). But we are prejudiced towards cupcake. In order to make Mini-Cocktail, we filled the bottom of a mini martini glass with about 10 of a simple favor of Jelly Belly jelly bean Cocktail classics. Then we added a 3/8 inch slices of cupcake cut into 1 1/2 inch circle at the top of the beans. Next we covered cupcake slice with frosting tinted in vibrant cocktail colors to match beans and garnished with additional prayers of the same taste and a cocktail fork. What a fun small dessert. It is precisely the right part, when you know you are tasting other desserts, easy to carry around an event or a party, and just as easy to eat while you mixed with cocktail fork included in design.


This event was amazing. It was the who's who in food and restaurants in New York City. Jean George, Tom Colicchio, Francois Payard, Daniel Boulud, Garden Tavern and Clinton Street baking to name just a few of the more than 50 participants. Food Network Guy Fieri and Sandra Lee was there as well as cake literature like Ben Israel. Once we had meet Ace cakes, Duff Goldman!


We did this amazing Mini Cupcake Cocktail Tower for the table.
There is a little light inside the tower for the effect is dramatic lighting.


Of course, we do not go anywhere without corn on the cob Cupcakes!

We used Peach Bellini and Pomegranate Cosmo and frosting in matching shades of yellow, and pink.

Rice Krispie Treat Cupcakes


"It's genius!" I screamed when I emerged from the shower and my concept of Rice Krispie treat cupcakes to my husband and 16 months old child explained (there is no need to be modest in one's own home).  "Everything I should do," I cried, "is use Rice Krispie as an edible treats, crispy cupcake liner, put a fried mini cupcake, Frost, and add some sprinkles for fun!"  They both shook their head (Jonathan because he knows that there is no stopping me when I'm with one of these ideas, and Myles come because he thinks it's funny that around his head shake).  "People will love it," I said, "because it combines two of America's favorite desserts in a!" make easy to package


Once I had a chunk of time to bake, I tried my concept.  It worked!  There's not much, but let me break it down for you anyway just to make sure that you have it:


Make your favorite Rice Krispie treat recipe (I used my honey, Nutella Rice Krispie treats).  Instead of the mixture into a baking pan, press the in a standard sized cupcake tin, to ensure that it rises the sides of each depression (as above).  I found that it was an empty mini cupcake wrapper on top of the krispies and press down on all sides helped. Note: I used a silicone cupcake tin easier to pop the linings of the krispie.  If you don't have a silicone pan, you must use the tin well before you click the krispies in fat. The tin of "cupcake liners" refrigerator for at least three hours.Box 12 of your favorite mini cupcakes (I used Basic vanilla cupcakes).  Remember, a standard cupcake recipe convert to minis, the baking time cut in half.Do not delete the edible Rice Krispie treat linings of the cupcake tins. Remove the paper liners from the mini cupcakes and place a mini cupcake krispie in every. You'll notice that the mini cupcake is greater than the lining.  Press the top of the cupcake on to flatten it a little (when I first with the linings of the krispie of the tin, the force tried of the cupcakes caused the krispie linings to lose their shape is deleted).Remove the cupcake filled treats of the tin.Frost with your favorite frosting (I recommend chocolate cream cheese frosting).Top with sprinkles or anything else that makes you happy.a look inside

Broccoli Miso soup-it's not just Miso soup with Broccoli

  If I think miso, I think of a thin Broth-a superficial salty soup served pre-sushi with a few tofu cubes (little rafts) and a number of button mushrooms (small people trying to get to the rafts).  I never think of miso as a seasoning.  Fully inspired by an apple cobbler in this month's Bon app?tit with miso streusel topping, I decided to try some unconventional applications of miso.  In this post, I will tell you about a broccoli soup seasoned with miso (it is with miso soup, but not miso soup).  Then, in a future post, I'll tell you about a miso ice cream. I will be around the series with ginger pear cupcakes with miso salted caramel.


Brocolli Miso soup


The broccoli miso soup is well salted (with no added salt) and creamy (with no milk or cream)-everything from the miso.  The miso also offers the soup with an unexpected depth of flavor.  Brocolli, carrots, onions and olive oil make a stir-fry, but the same ingredients with some miso a hearty winter soup.


I found the recipe for brocolli miso soup on well Fed. Here is the recipe as I made (I adjusted it just a little of the original):


Yield: 4 servings
2-3 tablespoons extra virgin olive oil1 medium onion, finely chopped2 carrots, finely choppeda bunch of broccoli (about 8 oz), removed from the stems, the stems with a vegetable peeler peeled and diced florets (I used brocollette, because I had it in the House.  It's one of those crazy hybrid vegetables-a cross between broccoli and kale) 4 tablespoons white miso dissolved in 1 cup of water (I used red miso) 2 bay leaves1 teaspoon freshly grated nutmeg
Heat a large stock pot over medium-high heat.  Add enough olive oil to coat the bottom.  When the oil is hot, add the onions and carrots and cook until the onions are translucent and the carrots begin to soft, about 5 minutes.  Add the diced broccoli stems and cook for about 5 minutes, until the stems begin to soften.The broccoli florets, the dissolved miso paste and add the Bay leaves.  Add enough water to cover the florets.  Bring the water to a boil.Reduce heat and simmer for about 35 minutes or until the carrots, broccoli stalks and florets very tender. Remove the Bay leaves. With a immersion blender to puree of the contents of the pot. (You can dump the contents of the pot in a standard blender, but treat yourself to an immersion blender.  It is a great item and not too expensive.)The nutmeg and any other herbs that you want to add (I don't see the need to add anything-not even salt or pepper). Eat!

Happy Vacation Cupcakes

Happy summer Cupcakes

Hope everyone has a wonderful summer. We made makes waves cupcakes in What's new, Cupcake? because we both love bombeunders?gelser vacations with our families. We did even as well as the folks IT the tubing through rapids look like caricatures of us. One of our readers, a very talented cupcaker named Christine Roe, took the challenge and decided to make cupcakes of her own family on vacation. She sent us these sweet family Camping Cupcakes with a comment about how she made them all about it is great from the fire ring for Spring fish and fishing poles, a bit g?kkebreve and couples in their sleeping bag. Christine added a photo with a campsite characters selected ROE point sleeping couple, the sweet touch!

Here are some pics of my camping cupcakes for you.
Her master and in our "sleeping bag". I used the idea from woke up party in your book Hello, Cupcake!.
The trees are sugar hop cones.


Fire ring is the remaining part of a cut sugar cone. I used Chinese noodles to burn and remaining point rolled
starbursts to knock out the flames. The sand is just a mixture of crushed vanilla waffles and famous chocolate waffles.
The log is only 2 marshmallows or jelly drizzled with chocolate frosting. And plate to guide you to your campsite ...
just a pretzel "glued" with frosting to a vanilla wafer melting point. Fishing poles are wheat sticks with left over flattened starbursts.
The water is decorating gel tinted blue. Found a box of bunny crackers to add scenery and Goldfish to the water.
I used 6 great cupcakes and 11 regular size cupcakes.
