The ship Cupcakes

It is notoriously difficult to ship cupcakes.  If you try to ship cupcakes, there's that annoying problem of keeping the cupcakes turning upside down and the gift arrive as a frosted window instead of frosted cupcakes.

So how do you ship Cupcakes?

So how you cupcakes sent?  The answer is to use a half pint mason jars if your cups! The Mason jars oven safe-you can have your cupcakes directly in the pottery.  Cast on 1/4 cup of batter into the pot – leaving room for plenty of enamel and place the pot directly on your oven rack (make sure the lid not!).  Just like your regular cupcakes bake.

When the cakes out of the oven, wait for them to cool and freeze them (most frostings will work, although I wouldn't using whipped cream recommend, because it is not as good freeze). Then seal the jars and freeze them.  Once they're frozen solid, decorating the pots, but you want (ribbons and gift tags work well), pack them well (broken glass is worse than smooshed glaze), and ship them next day air.  If you send them somewhere warm, you can also include an ice pack in the box to ensure that they remain cool during their travels.

The specific Cupcakes in the photo

The cupcakes in the photo are brandied cherries cupcakes that I voted for Paula Dean created.  Because I baked them in the jars, I was able to make them extra moist without fear of falling off the wrappers.  They are loaded with brandied cherries and then sprinkled with extra cherry syrup.  They would make an excellent holiday gift.  Get the recipe on Paula Deen.
